What you'll need

How it's done

Cut the chicken thighs into small cubes (about 1 cm). In a large bowl, combine the chicken pieces with Chiribaya spice, oregano, salt, and pepper. Add lemon juice and oil, and mix everything well.
You can cook the chicken either in the oven or in a large pan – both methods work great. Oven method: Preheat the oven to 190°C (375°F) and bake the chicken for about 18 minutes, or until fully cooked. Pan method: Add the chicken to a preheated pan and cook over medium heat for about 14–18 minutes, until cooked through.
While the chicken is cooking, chop the veggies (onion, romaine, tomatoes) and mix the sauce (yogurt, Cherry Bomb hot sauce, cilantro, a pinch of salt and pepper). We also like to warm up the tortillas a bit before assembling.
Now you’re ready to build your wraps. Fill your warm tortillas with the cooked chicken, salad, veggies, and sauce. Fold the bottom up and then wrap the sides in. Enjoy! Leftovers can be stored in an airtight container in the fridge for up to 4 days, or wrapped in plastic wrap and frozen for up to 2 months (just leave out the romaine lettuce for freezing).
