How it's done

Mix the chili flakes, ground cumin, salt, pepper, and sugar in a heatproof bowl
Add the oil, garlic, spring onion, and shallot (optional: peanuts, cinnamon stick, and star anise) to a pot and heat on high while stirring continuously. Once the onion and co. are golden brown (about 10 minutes), strain the oil directly onto the chili flake mixture and stir well (careful – very hot!)
Let the finished oil cool completely and store it in a sealable container. It will keep for more than 1 year in the fridge
To use: Pairs well with any dish that can handle a spicy kick – whether on pizza, fried eggs, or in a gyoza sauce.
