How it's done
By hand: Add egg yolk and mustard to a bowl and whisk together. Slowly (really slowly!) drizzle in the oil while whisking continuously until the sauce emulsifies.
With a hand blender: Add the egg yolk and mustard to a tall container and start blending. Slowly pour in the oil while blending until a stable emulsion forms.
Add honey and the juice of half a lemon, then stir to combine. Finely grind the chili and season with salt, pepper, and oregano to taste.
Chill until ready to serve and consume within 5 days.
