How it's done
Slowly fry the bacon over low heat to render the fat. Fry until crispy, about 7 minutes, then drain on kitchen paper. Set aside 2 tablespoons of the bacon fat.
In a tall container, combine the egg yolk, mustard, vinegar, salt, and pepper. Blend with an immersion blender until smooth.
While blending, slowly drizzle in the oil and bacon fat to create a creamy, emulsified sauce. (Tip: move the blender slowly upwards while mixing to help bind.)
Season the finished sauce with smoked paprika and chipotle chili.
Break the crispy bacon into small pieces and stir it into the baconnaise.
Chill until ready to use. Keeps up to 5 days in the fridge.
